Favorite 4th of July Recipes

4th of July will be here in just a few days, so we wanted to share some of our favorite recipes.

Barbecue Chicken Foil Packets
BBQ Chicken Foil Packet with Potatoes, Onion and Corn


  • 1 ½ lbs baby potatoes
  • 1 onion, sliced in slivers
  • Broccoli, cauliflower, carrot medley, fresh whole mushrooms
  • 1 tablespoon seasoning salt
  • 1/4 teaspoon pepper
  • Boneless chicken breasts
  • 1/4 cup real bacon bits
  • 2/3 cup cheddar cheese
  • 1 cup barbecue sauce
  • Green onions or chives
  • Sour cream, optional


Preheat grill to medium high heat.

Lay out 4 large pieces of heavy duty foil and spray with non-stick spray.

Place equal amounts of potatoes and onions in the middle of each packet. Drizzle with oil and sprinkle with seasoning salt and pepper.

Place a chicken breast on top of the potatoes. Brush each side of the chicken breast with barbecue sauce.

Drizzle vegetable medley and mushrooms with oil and sprinkle with seasoning salt and pepper. Place around the chicken breast.

Place another piece of foil over top and seal edges. Place on hot grill and cook (potatoes down) for about 25 minutes or until potatoes are tender and chicken is cooked through.

Cut open packet, brush chicken with more barbecue sauce if desired and top with cheddar cheese and bacon bits. Place back on grill (do not reseal) about 5 minutes or until cheese melts.

Garnish with sour cream and chives if desired.

Berry Cheesecake Pie


  • 1 9" piecrust baked and cooled
  • 1 8 oz. cream cheese, softened
  • 1/3 cup sugar
  • 1 teaspoon vanilla
  • 1 can cherry pie filling
  • 1 container fresh raspberries
  • Fresh strawberries, sliced


In a mixing bowl, beat cream cheese, sugar, and vanilla until fluffy. Spread in bottom of baked and cooled pie crust. Mix together pie filling, raspberries, and strawberries. Spread over cream cheese mixture. Chill at least 1 hour before serving.
